20 Minute Meal Monday

This week was spent travelling and spending time with the extended family.  Of course no family get together is complete without some food! We strive as a family to keep it healthy, simple, and super tasty and oh boy did we hit the jackpot with this simple wrap recipe that was hearty enough for a family dinner! Here is the kicker... it takes a whopping 20 minutes to put together!

The great part about this is it uses rotisserie chicken that is available pre-cooked in most grocery stores. I usually roast a chicken once during the week so I could use the leftovers for this delectable dish!

Here is a rundown and how this dish goes together:

1 Cup Grape Tomatoes halved
3 T crumbled feta cheese
1 1/2 T  Fresh lemon juice
1 T chopped fresh oregano
1 T olive oil
1 t ground red pepper
4 ounces shredded rotisserie chicken (this is about one cup)
2 small cucumbers chopped
6 T plain hummus  ( I used garlic hummus and LOVED the addition of flavor)
6 (8 inch) whole wheat flour tortillas

Directions: Place tomatoes, olives, feta, juice, oregano, oil, pepper, chicken, and cucumber in a large bowl; toss to combine . Spread 1 tablespoon hummus over 1 side of each tortilla. Top each tortilla with about 1/2 cup chicken mixture. Roll up wraps; cut in half.

Tip : If you are going to save it, make sure you do not put it in the tortillas. Save the chicken salad separately and make more sandwiches the next day. If you save already completed sandwiches you will have a big soggy mess the next day.

Super easy right!?!  Great flavor too.  Oh, and I forgot to mention it is HEALTHY!

My kids ate this because really they eat anything that is wrapped in a tortilla but it is definitely a tasty treat for the adults. So if you are stumped for a nice option for a play date lunch, or baby shower fare... add this to the menu!
