Meal-Time Monday: White Chili

We love love love White Chili!  :)  I hope you do too!  :)  Let me know what you think! 


6 cups water
1 teaspoon lemon pepper
1 teaspoon cumin seed (powdered)
4 halved chicken breasts
olive oil cooking spray
1 clove minced garlic
1 cup chopped oinion
2 9 oz frozen white corn--Green giant
2 4 oz diced green chilies--undrained
1 teaspoon ground cumin
3 teaspoons lime juice
2 15 oz Great Northern Beans--undrained
crushed tortilla chips
Monterey jack cheese


Combine water, lemon pepper and cumin seed.  Bring to boil--add chicken breasts--cover and simmer 25-30min.  Remove chicken, and save the broth.  Break up chicken into bite-size chunks, return to broth the put aside.  Spray skillet with spray then sautee the garlic and onions.  Add to chicken mixture. Add rest of ingredients except the beans and bring to a boil.  Add beans and thoroughly heat.  Serve with crushed chips, cheese, salsa, and sour cream.
