Meal-Time Monday: Country Breakfast Casserole


**I got this recipe from WIC and it is now a family favorite! However, I am giving you my version of the recipe. I changed a few things to make it better! Enjoy!

Country Breakfast Casserole

10 eggs, scrambled
3 cups grated cheese (mozzarella or cheddar)
1 1/2 cups of milk
16 oz frozen hash browns, thawed (I like to use freshly grated potatoes. I use about 6 medium potatoes, peeled and grated)
Salt and pepper to taste
Veggies (bell peppers, onions, green onions (optional), etc.)
Diced ham (sometimes I use sausage or turkey, whatever kind of meat you prefer. If you use sausage, make sure you cook it before you put it in the casserole.)
black olives, sliced

Preheat oven to 350 degrees. Combine all ingredients in a bowl. Pour into a 9 x 13" baking dish. Bake for 50-60 min.
